Ingredients:
- 1 large ripe Banana, mashed
- 150g rolled oats
- 80g Maple syrup or honey
- Some lemon zest – about a whole lemon
Preheat the oven to 175C or 350F and line a baking sheet with parchment paper. Mix all the ingredients together in a bowl – mash the bananas, then add the honey or maple syrup and the oats. Mix well until everything is combined. Then add your lemon zest. I like the taste of lemons, so I tend to use a whole lemon and squeeze a bit of juice into it, too. Now it’s time to put them onto your parchment paper. Using a tablespoon, scoop a heaped one onto the baking sheet and flatten it slightly. Now get them into the oven for about 12-15 minutes or until golden brown.

Once the Lemon Oat Cookies have come out of the oven, put them onto a wire rack to cool. While you are waiting, you could whip up a little lemon drizzle. Add the remaining lemon juice in a bowl and add enough icing sugar to make your drizzle, then spoon over the cookies.
