Ingredients:

  • 100g rolled oats (blended into oat flour)
  • 50g rolled oats (left whole)
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 50g finely shredded carrots
  • 110g honey or maple syrup
  • 60g almond butter (or peanut butter)
  • 1 large egg (or flax egg for vegan option)
  • 1 tsp vanilla extract
  • 60g dark chocolate chips
  1. Start by preheating the oven to 350°F (175°C) and line an 8×8-inch (20x20cm) baking pan with parchment paper.
  2. In a bowl, combine oat flour, whole oats, cinnamon, salt, and shredded carrots and in another bowl, whisk together honey, almond butter, egg, and vanilla extract until smooth.
  3. Now let’s pour the wet mixture into the dry ingredients and stir until fully combined, and fold in the chocolate chips.
  4. Put the mixture into the prepared pan and press down and bake for 18-22 minutes, or until golden brown and set in the center.

Once out of the oven let cool completely before slicing into bars and enjoy!
